Instructions
Prepare all the ingredients before starting.

Preheat the oven to 400°F (200°C).
Season the chicken evenly with salt and freshly ground black pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken, skin-side down, and cook until golden brown, about 5 minutes.
Flip the chicken over and add mushrooms with a pinch of salt to the skillet. Raise the heat to high and cook, stirring occasionally, until the mushrooms reduce in size, about 5 minutes.

Transfer the skillet to the preheated oven and bake until the chicken is fully cooked, with no pink remaining in the center and the juices running clear, about 15 to 20 minutes. The internal temperature should reach 165°F (74°C) when checked with an instant-read thermometer. Move the chicken breasts to a plate and cover loosely with foil; set aside.
Place the skillet on the stovetop over medium-high heat and cook the mushrooms, stirring occasionally, until browned bits form at the bottom of the pan, about 5 minutes. Add water to the skillet and bring it to a boil, scraping up the browned bits as you go. Let the water cook down by half, about 2 minutes. Remove from heat.

Add any reserved juices from the chicken to the skillet. Stir in butter and cook, stirring constantly, until the butter melts completely and blends into the mushroom mixture.

Season with salt and pepper. Drizzle the mushroom sauce over the chicken and serve immediately.
