Chef John's Sweet Glazed Yams
Ingredients List
For the Yams:

3 tablespoons kosher salt

2 quarts cold water

3 pounds orange-fleshed sweet potatoes, peeled and cut into 2-inch pieces
For the Glaze:

1 cup brown sugar

4 tablespoons unsalted butter

½ cup freshly squeezed lemon juice

¼ cup maple syrup
-
½ teaspoon ground ginger
-
¼ teaspoon ground cinnamon

1 pinch cayenne pepper

Salt to taste

Chopped pistachios, pecans, or walnuts for garnish
Instructions
Dissolve salt in 2 quarts of cold water in a large pot. Add the sweet potato pieces and bring the mixture to a simmer over high heat. Once simmering, lower the heat to medium-low and cook for 5 to 7 minutes, or until the potatoes are tender but not fully soft. Check for doneness using a knife. Drain the potatoes.
In a skillet, combine brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and a pinch of salt. Heat over medium-high, stirring until the glaze ingredients melt and begin to bubble. Continue cooking for 4 to 6 minutes, stirring occasionally, until the mixture thickens.
Add the drained sweet potatoes to the skillet. Increase the heat to high and cook, stirring constantly, until the potatoes are well coated in the glaze and tender, and the glaze has thickened, about 5 to 8 minutes. Transfer to a serving dish and top with chopped nuts for garnish.
Chef's Tip:
If you're using table salt instead of kosher salt, reduce the amount to 5 teaspoons of fine salt in place of the 3 tablespoons of kosher salt.
