Classic Hot Brown Sandwich

Ingredients Needed
For the Sauce:
-
½ cup butter
-
½ cup all-purpose flour
-
3 cups milk
-
6 tablespoons grated Parmesan cheese
-
1 egg, beaten
-
2 tablespoons heavy cream
For the Sandwiches:
-
8 slices white bread, toasted
-
2 pounds sliced roasted turkey
-
1 tomato, thinly sliced
-
salt and pepper to taste
-
¼ cup grated Parmesan cheese
-
8 slices crispy bacon
Instructions
-
Prepare the sauce: In a saucepan, melt butter over medium heat. Whisk in the flour and cook, stirring until it begins to brown slightly. Slowly add in the milk, ensuring no lumps form, and bring to a boil while stirring constantly. Stir in Parmesan cheese and then the beaten egg to thicken. Remove from heat and mix in the cream.
-
Preheat the broiler in your oven.
-
Assemble the sandwiches: For each Hot Brown, place two slices of toasted bread in the bottom of a small casserole dish. Top with generous layers of roasted turkey and tomato slices. Season with salt and pepper, then pour the sauce over the top and sprinkle with Parmesan cheese.
-
Place the casserole dishes under the preheated broiler and cook for about 5 minutes, until the top is browned and bubbly. Remove and add two slices of bacon in a cross pattern on top of each sandwich.
