Cold Hiyashi Chuka Noodles

Ingredients Needed

3 tablespoons soy sauce

2 tablespoons white sugar

3 tablespoons white vinegar

5 tablespoons chicken stock

1 teaspoon sesame oil

½ teaspoon chili oil (Optional)

2 (3 ounce) packages ramen noodles

1 egg, beaten
-
½ cucumber, julienned
-
1 carrot, grated
-
1 slice cooked ham, cut into thin strips

¼ sheet nori, cut into thin slices
-
1 tablespoon hot Chinese mustard (Optional)
Instructions
In a small bowl, combine soy sauce, sugar, vinegar, chicken stock, sesame oil, and chili oil. Stir until the sugar completely dissolves, then set the mixture aside for later use.
Bring a pot of water to a boil. Add the ramen noodles and cook for 2 minutes. Drain the noodles and let them chill in the refrigerator. In the meantime, heat a small nonstick pan over medium heat. Pour in the beaten egg and swirl the pan to evenly coat the bottom with egg. Once firm, fold the egg in half, remove from the pan, and slice it into thin strips.
To serve, arrange the chilled noodles on individual plates. Pile the sliced egg, cucumber, carrot, and ham separately on top. Drizzle the sauce over the noodles and garnish with crumbled nori. Optionally, serve with a side of spicy mustard for added kick.
