Creamy Gorgonzola Sauce

3 ounces crumbled Gorgonzola cheese

Cooking Instructions
Heat a heavy pan over medium heat and add the cream. Allow it to simmer, cooking it down until it has reduced by half, roughly 8 minutes, stirring occasionally. Season with salt, black pepper, and a pinch of cayenne for some heat.
Bring a pot of salted water to a rolling boil. Add the dried ravioli and cook, stirring occasionally, until the pasta is tender, about 16 to 18 minutes. Drain, but be sure to save a cup of the pasta water.
Gently toss the cooked ravioli into the creamy sauce and reduce the heat to low. Stir in the Gorgonzola cheese, mixing until it melts smoothly. If the sauce becomes too thick, adjust it by adding some of the reserved pasta water.
Add 2 tablespoons of chopped parsley and freshly grated Parmesan cheese. Transfer the dish to a serving bowl, and garnish with diced apple, toasted walnuts, and a sprinkle of the remaining parsley.

Cooking Tip
If you're using fresh ravioli or tortellini, double the amount of pasta—use 12 ounces instead of 6 for a heartier dish.
