Creamy Salmon and Leek Pasta Dish

Ingredients List
-
½ (8 ounce) package spaghetti
-
1 tablespoon butter
-
1 large leek - light parts only, rinsed, and chopped
-
salt to taste
-
½ cup white wine
-
½ lemon, juiced
-
1 cup creme fraiche
-
1 teaspoon tarragon Dijon mustard
-
1 pinch cayenne pepper, or to taste
-
6 ounces skinless, boneless salmon, sliced
-
½ cup chopped cilantro, or to taste
-
1 pinch cayenne pepper
Cooking Instructions
Fill a large pot with lightly salted water and bring it to a boil. Add spaghetti to the boiling water and cook, stirring occasionally, for about 12 minutes until al dente. Drain and return the pasta to the pot.
Heat butter in a saucepan over medium heat. Add leeks and cook, stirring, until softened, about 6 to 7 minutes; season with salt. Pour in white wine and lemon juice, then bring to a boil while scraping up any browned bits from the pan with a wooden spoon. Let the mixture simmer until most of the liquid evaporates, about 5 minutes.
Stir in crème fraîche, mustard, and a pinch of cayenne pepper into the leek mixture. Lower the heat and cook for another 5 minutes until warmed through. Add the salmon to the sauce and cook, stirring, until it flakes easily and is no longer pink in the center, about 2 to 3 minutes. Remove from heat and stir in cilantro. Pour the sauce over the spaghetti and toss to coat. Garnish with a pinch of cayenne pepper for extra heat.
