Creamy Shrimp Scampi with Half-and-Half

½ (16 ounce) package linguine pasta

4 tablespoons butter

2 cloves garlic, minced

1 pound jumbo shrimp, peeled and deveined

2 tablespoons Pinot Grigio wine

2 teaspoons lemon juice, or to taste

½ cup half-and-half

¼ cup finely shredded Parmesan cheese

2 tablespoons chopped fresh parsley, or to taste
Cooking Instructions

Bring a large pot of salted water to a boil. Cook the linguine in the boiling water until tender but still al dente, about 8 minutes.

While the pasta cooks, melt 2 tablespoons of butter in a skillet over medium heat. Add the garlic and sauté until fragrant and lightly golden, about 1 minute. Add the shrimp and cook until the tails curl in, around 2 minutes per side. Stir in the remaining butter, Pinot Grigio, lemon juice, half-and-half, and Parmesan. Mix well to combine.

Drain the linguine and divide it into two bowls. Spoon the shrimp mixture on top and garnish with fresh parsley.
