Cooking Instructions
Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
In a shallow dish, mix flour, a pinch of cayenne pepper, a pinch of garlic powder, salt, and pepper. In another bowl, beat the eggs. In a third dish, combine panko breadcrumbs with the remaining cayenne pepper, garlic powder, salt, and pepper.
Coat the chicken thighs in the flour mixture, shaking off any excess. Dip them into the beaten eggs, then press into the panko breadcrumb mixture, ensuring both sides are well-coated. Place the breaded thighs onto the prepared baking sheet.
Bake the chicken thighs in the preheated oven until they are golden brown and the center is no longer pink, about 40 minutes. An instant-read thermometer inserted near the bone should register 165°F (74°C).
