Crispy Fried Sweet Potatoes

6 sweet potatoes, peeled

½ cup butter, or more as needed

2 cups packed light brown sugar
Instructions

Bring a large pot of water to a boil. Add the sweet potatoes and cook for about 4 minutes. Remove them from the water and cut into 1/2-inch thick slices.

In a large skillet, melt butter over medium heat. Stir in brown sugar until it dissolves, adding more butter as needed. Add the sweet potato slices and fry until golden and tender, turning occasionally. Serve immediately while hot.
