2 teaspoons red pepper flakes, or to taste

4 pounds chicken wings, separated at joints, tips discarded

2 tablespoons fine bread crumbs

1 cup finely grated Parmigiano-Reggiano cheese, divided
Cooking Instructions
Preheat your oven to 450°F (230°C). Line a baking sheet with aluminum foil and spray the foil with cooking spray to prevent sticking.
In a large stockpot, combine water, vinegar, 1/4 cup of salt, bay leaf, thyme, oregano, and rosemary. Bring to a boil. Add the chicken wings and bring it back to a boil. Cook for 15 minutes. Using a slotted spoon, remove the wings and place them on a cooling rack to dry for 15 minutes.
