Crispy Shredded Beef Chimichangas

2 pounds boneless beef chuck roast, trimmed of fat

¼ cup water

1 ½ cups beef broth

3 tablespoons red wine vinegar

2 tablespoons chili powder

1 teaspoon ground cumin

4 (8-inch) flour tortillas

3 tablespoons unsalted butter, melted

1 cup salsa

½ cup shredded Monterey Jack cheese

½ cup sour cream
Cooking Instructions

In a Dutch oven, cook beef and water over medium heat, covered, for 30 minutes. Uncover and cook until the liquid evaporates and the beef is browned, about 10 minutes.

In a bowl, mix beef broth, red wine vinegar, chili powder, and cumin. Pour this mixture over the beef. Cover and cook for another 2 hours until the beef is tender and easily shreds. Let it cool, then shred the beef and combine with the pan juices.

Preheat the oven to 500°F (260°C).

Brush both sides of the tortillas with melted butter. Place the beef mixture down the center of each tortilla. Fold the ends over the filling, then fold the sides in to form a packet. Arrange the chimichangas seam-side down in a 9x13-inch baking dish.

Bake in the preheated oven for 8 to 10 minutes, or until golden brown. Serve with salsa, shredded cheese, and sour cream.
