Add yuca to a large pot and cover with water. Bring the water to a boil, then reduce to medium-low heat. Cover the pot and simmer for 20 to 30 minutes until the yuca can be easily pierced with a fork. Drain the yuca and let it steam for a few minutes until cool enough to handle.

Slice the yuca into fry-like sticks, removing the tough core.
