1 (3 pound) boneless top loin pork roast
Instructions

Mix oil, salt, and pepper in a bowl; rub the mixture over the pork and refrigerate while the oven preheats.

Preheat the oven to 475°F (245°C).

Place the pork on a roasting rack in a large pan. Roast in the preheated oven for 30 minutes.

Remove the pork and reduce the oven temperature to 325°F (165°C). Insert a meat thermometer into the thickest part of the pork. The temperature should range from 80 to 110°F (27 to 43°C).

Let the pork rest uncovered at room temperature until the internal temperature reaches 115–140°F (46–60°C), about 30 minutes.

Return the pork to the oven and continue roasting until the internal temperature reaches 145°F (63°C), which will take about 15 to 30 minutes more.

Let the roast sit uncovered for 15 to 20 minutes before slicing and serving.
