Discover the Soup That Will Replace Your Go-To Chicken Noodle
As the crispness of fall and winter settles in, soup season begins, and for my family, that meant dishes rooted in our Mexican heritage. From menudo to pozole to sopa de fideo, these were the comforting bowls that warmed us throughout the colder months. Not only did these soups heat us up after frosty mornings, but they also filled the house with warmth. My Nana’s home always had a chill to it, and nothing helped more than a pot of menudo simmering on the stove, filling the air with cozy aromas. When I moved away to college, I was missing those soups, so I had to teach myself how to recreate them. One soup, in particular, changed how I looked at traditional chicken soup forever.
What Is Caldo de Pollo?
Caldo de pollo, or chicken soup, is exactly what it sounds like: a comforting chicken and vegetable soup. What sets it apart from the classic chicken noodle soup is the use of whole chicken pieces instead of shredded or chopped meat. The soup usually includes vegetables like carrots, cabbage, and potatoes, but like any good soup, you can customize it with whatever vegetables you prefer.
This hearty soup has become my winter staple, gradually replacing traditional chicken noodle soup. It’s rich in flavor and incredibly satisfying, not to mention it brings a little taste of home, especially on those days when I’m feeling nostalgic for Colorado.
How to Make Caldo de Pollo
The beauty of this soup lies in how simple it is to make, yet it delivers big on flavor. Start by bringing water, chicken (either legs or breasts), and your seasonings to a boil. I like to use salt, pepper, garlic powder, and minced garlic, adjusting to taste. Once it reaches a boil, reduce the heat and let it simmer until the meat easily falls off the bone or can be pulled apart with a fork. Next, add some chicken bouillon and your choice of vegetables. Let it simmer until the vegetables are tender. Taste and adjust the seasoning if needed. Serve the soup hot with a side of tortillas and rice for the perfect meal.
See? This soup is as easy as it gets to prepare, and I guarantee it will soon become one of your favorites.
