Duck with Orange Sauce

Instructions
Using a sharp knife, score the skin of the duck breasts in a crosshatch pattern, cutting through the skin and fat. Generously season both sides with salt, pressing it into the flesh. Allow the duck to rest, skin-side up, at room temperature for 15 minutes.
In a small bowl, whisk together chicken broth, orange liqueur, sherry vinegar, orange marmalade, orange zest, and a pinch of cayenne pepper.
Pat the duck breasts dry with paper towels, then re-season the skin side with a generous amount of salt.
Heat the duck fat in a heavy skillet over medium heat for 2 minutes. Add the duck breasts, skin-side down, and cook for 6 minutes. Flip the breasts and continue cooking until they firm up and are reddish-pink and juicy in the center, about 4 minutes more. An instant-read thermometer should register 140°F (60°C) in the center. Transfer the duck to a plate and let rest. Pour any rendered fat into a glass jar for later use.
Return the skillet to medium heat, whisk in the flour, and cook for about 1 minute, until fully incorporated. Add the orange mixture to the pan, bring it to a boil, and cook for 3-5 minutes until the sauce thickens and reduces. Lower the heat and, once the bubbling subsides, stir in the butter until it melts completely. Season with salt to taste.
Slice the duck breasts against the grain, arrange them on a plate, and spoon the orange sauce over the top.
Cooking Tip
If you don't have duck fat, vegetable oil can be used as a substitute.
