Egg-Topped Avocado Toast

2 slices multigrain bread

1 ripe avocado, pitted, peeled

1 teaspoon lemon juice, or to taste

1 pinch cayenne pepper

sea salt to taste

ground black pepper to taste
Instructions

Heat butter in a skillet over medium-low heat. Crack eggs into the skillet, cooking them until the whites are set and they’re firm enough to flip, around 2 to 3 minutes. Flip carefully to avoid breaking the yolks, and cook until they reach your preferred doneness, about 2 to 5 minutes more.

While the eggs are cooking, toast the bread slices to your desired crispness, about 3 to 5 minutes.

Mash the avocado in a bowl, adding lemon juice, cayenne pepper, and sea salt. Spread the avocado mixture onto the toasted bread, then top with the fried egg. Season with additional sea salt and pepper to taste.
