Cornbread Base:

1 (7.5 ounce) package dry cornbread mix

Stuffing Ingredients:

2 medium onions, chopped

6 stalks celery, chopped

1 medium green bell pepper, chopped

1 pound pork sausage

16 slices white bread, torn into pieces

1 teaspoon dried thyme

1 teaspoon poultry seasoning

1 teaspoon salt

½ teaspoon ground black pepper

½ cup chopped fresh parsley

4 cups chicken stock

Instructions
Preheat the oven to 400°F (200°C). Lightly grease an 8-inch square baking dish.
Prepare the cornbread: In a small bowl, mix the cornbread mix, milk, and egg. Stir until fully combined. Pour the batter into the greased baking dish.
Bake in the preheated oven for 15 to 19 minutes, or until golden brown. Once done, remove from the oven and allow it to cool. Reduce the oven temperature to 325°F (165°C).
While the cornbread is baking, prepare the dressing: Melt butter in a large skillet over medium heat. Sauté onions, celery, and bell pepper in the melted butter until tender, but not browned. Remove from heat; do not drain the vegetables.
In a separate large skillet, cook the sausage over medium-high heat, stirring occasionally, until evenly browned. Remove from heat once done.
Break the cooled cornbread into pieces and transfer them to a food processor. Add the bread chunks and pulse until the mixture is crumbly. Then, move it to a large mixing bowl.
To the crumbled cornbread, add sage, thyme, poultry seasoning, salt, and pepper. Mix in the parsley, sautéed vegetables, and sausage along with any pan drippings. Pour in the chicken stock and beaten eggs; the mixture will be slightly wet.
Grease a 9x13-inch baking dish and fill it with the cornbread stuffing mixture.
Bake in the preheated oven for 1 hour.
