Filipino Beef Asado
Ingredients Needed

1 (4 pound) beef chuck roast, quartered

salt and ground black pepper to taste

2 tablespoons cooking oil

1 onion, diced

2 cloves garlic, crushed

2 large tomatoes, chopped

1 (5 ounce) jar pitted Manzanilla olives

1 onion, quartered

2 beef bouillon cubes

2 bay leaves

1 tablespoon whole peppercorns, crushed

½ cup ketchup

1 large red bell pepper, sliced

4 small potatoes, peeled and quartered

1 tablespoon corn flour (Optional)

1 teaspoon water (Optional)
Instructions

Season the beef with salt and black pepper, then set aside.

Heat oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened (about 5 minutes). Transfer to a large pot. Brown the beef pieces in the skillet, turning to brown all sides, then place them in the pot. Add tomatoes, olives with their brine, quartered onions, bouillon cubes, bay leaves, and crushed peppercorns to the pot, and bring to a boil. Stir in ketchup, reduce heat to medium-low, and let it simmer for 1 hour.

Remove the beef from the pot and set aside. Add the bell pepper to the pot and simmer for an additional 30 minutes.

In the meantime, heat 2 tablespoons of oil in the skillet and fry the potatoes until golden brown. Transfer them immediately to the pot.

Slice the beef against the grain and return it to the pot. Stir well and let it cook for another 5 minutes before serving. If the sauce is too thin, whisk corn flour and water in a small bowl, then stir into the sauce to thicken.
