Ingredients List
-
¼ cup butter
-
2 tablespoons olive oil
-
6 cloves garlic, minced
-
1 teaspoon red pepper flakes
-
salt to taste
-
1 ½ pounds broccoli, stem and florets chopped separately
-
3 cups chicken stock, or more as needed
-
1 (16 ounce) package angel hair pasta
-
½ cup freshly shredded Parmigiano-Reggiano cheese
Instructions
Heat butter and olive oil in a large pan over medium heat until hot. Add garlic and sauté, stirring frequently, until softened but not browned, about 1 to 2 minutes. Stir in red pepper flakes and season with salt to taste.
Pour chicken broth into the skillet and bring to a simmer. Add broccoli stems and cook until tender, about 10 to 12 minutes. If the mixture begins to dry out, add more broth as needed.
While the broccoli stems are simmering, bring a large pot of lightly salted water to a boil. Add the pasta and cook, stirring occasionally, until it’s nearly tender, about 4 minutes.
At the same time, add the broccoli florets to the skillet with the stems and cook until the florets are bright green and slightly tender, about 3 to 4 minutes.
Drain the pasta and transfer it to a large pot. Pour the broccoli mixture over the pasta, add Parmigiano-Reggiano, and stir everything together. Cover the pot and let it sit for about 2 minutes, allowing the pasta to absorb the extra sauce and finish cooking.
