Garlic Chicken Fried Brown Rice
Ingredients Needed

2 tablespoons vegetable oil, divided

8 ounces skinless, boneless chicken breast, cut into strips

½ red bell pepper, chopped

½ cup green onion, chopped

4 cloves garlic, minced

3 cups cooked brown rice

2 tablespoons light soy sauce

1 tablespoon rice vinegar

1 cup frozen peas, thawed
Instructions
In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chicken, red bell pepper, green onion, and garlic. Cook, stirring frequently, until the chicken is fully cooked, about 5 minutes. Transfer the cooked chicken mixture to a plate and set aside to keep warm.
In the same skillet, heat the remaining 1 tablespoon of oil over medium-high heat. Add the rice and cook, stirring to ensure it heats through. Mix in the soy sauce, rice vinegar, and peas, and cook for an additional minute. Return the chicken mixture to the skillet, stirring to combine with the rice. Cook until everything is hot and ready to serve.
