2 pounds boneless pork chops

½ teaspoon paprika

kosher salt and ground black pepper to taste

¼ cup butter, divided

1 (8 ounce) package sliced fresh mushrooms

4 cloves garlic, minced

1 teaspoon Dijon mustard

2 tablespoons all-purpose flour

2 cups beef broth
Instructions
Season both sides of the pork chops with paprika, salt, and freshly ground black pepper.
Heat a large pan over medium-high heat and add 2 tablespoons of butter. Sear the pork chops until they are golden brown and no longer pink in the center, about 2 to 4 minutes per side. Remove from the pan and set aside.
In the same pan, melt the remaining butter over medium-high heat. Add the mushrooms and cook until they turn golden and most of the moisture evaporates, about 5 minutes. Stir in the garlic and mustard, cooking for about 1 minute until the garlic becomes fragrant.
Sprinkle the flour into the pan and stir to eliminate any lumps. Gradually pour in the beef broth, whisking until smooth. Season with salt and pepper to taste. Lower the heat to medium and let the sauce simmer, stirring frequently, until it thickens, about 5 minutes. Adjust seasoning as needed.
Return the pork chops to the pan and heat them through, about 1 minute. Serve immediately while hot.

You can substitute bone-in pork chops or pork tenderloin for boneless pork chops, use chicken or vegetable broth in place of beef broth, and swap olive oil for butter if desired.
