Garlic Roasted Chicken with Potatoes

6 chicken leg quarters, split into drumsticks and thighs

6 large Yukon Gold potatoes, cut into chunks

24 cloves garlic, unpeeled

¼ cup maple syrup
Instructions
Preheat the oven to 400°F (200°C).
Place the butter in a roasting pan and melt it in the oven. Once melted, swirl the butter to coat the bottom of the pan, then add the chicken drumsticks and thighs, potatoes, and unpeeled garlic cloves. Season with salt and black pepper, then turn the chicken, potatoes, and garlic to ensure everything is coated in butter.
Bake in the preheated oven until the chicken is fully cooked and the juices run clear, about 40 minutes. Baste the chicken and vegetables with the pan drippings 3 times. Brush maple syrup over the chicken and spoon the pan drippings over the potatoes.
Return the pan to the oven and bake for another 20 minutes, or until the chicken and potatoes are tender and golden brown. An instant-read thermometer inserted into the thickest part of the chicken thigh should register at least 165°F (74°C). To serve, squeeze the soft garlic from the cloves and spread it over the chicken. Pour the pan juices over the chicken and potatoes.
