Ginataang Manok (Chicken in Coconut Milk)

3 tablespoons canola oil

½ cup sliced fresh ginger

1 (5 pound) whole chicken, cut into pieces

salt and ground black pepper to taste

2 (14 ounce) cans coconut milk

1 (10 ounce) package frozen chopped spinach, thawed and drained
Instructions

Heat oil in a large skillet over medium heat. Add ginger and sauté until fragrant and slightly browned. Remove ginger and set aside.

Season the chicken with salt and pepper. Add the chicken to the same skillet over medium-high heat, making sure not to overcrowd. Cook until lightly browned on all sides.

Return the ginger to the skillet and pour in the coconut milk. Bring to a boil, then cover, leaving the lid slightly ajar to let steam escape. Reduce heat to medium-low and simmer, stirring occasionally, for about 30 minutes until the chicken is fully cooked through.

Add the spinach and continue to simmer uncovered until the spinach is tender, about 8 to 12 minutes. Season with additional salt and pepper to taste.
