Gnocchi with Spicy Cherry Tomato Sauce

1 tablespoon olive oil

1 large red onion, finely chopped

1 clove garlic, minced

½ red chile pepper, minced

2 pints cherry tomatoes, quartered

1 ½ cups canned crushed tomatoes

1 (16 ounce) package fresh gnocchi

1 cup chopped fresh basil

⅔ cup Kalamata olives, sliced

¼ cup grated Parmesan cheese
Instructions

In a large saucepan, heat olive oil over medium heat. Add chopped onion, garlic, and chile pepper; sauté until the onion softens and becomes translucent, about 5 minutes. Increase the heat to medium-high and stir in the cherry tomatoes. Cook until the tomatoes begin to break down and form a sauce, around 5 minutes. Add the crushed tomatoes and bring the mixture to a simmer, then lower the heat to medium-low and let it cook for 10 minutes.

In the meantime, bring a pot of salted water to a boil over high heat. Drop in the gnocchi and cook until they rise to the surface, about 2 to 3 minutes. Carefully lift the gnocchi out of the water using a slotted spoon and transfer them to a serving dish.

Add basil and olives to the simmering sauce and cook for another minute. Pour the sauce over the gnocchi and finish with a generous sprinkle of Parmesan cheese before serving.
