Gourmet Chicken Sandwich Delight

4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness

1 teaspoon minced garlic

2 tablespoons mayonnaise

2 teaspoons prepared Dijon-style mustard

1 teaspoon chopped fresh rosemary

8 slices garlic and rosemary focaccia bread
Instructions
Season one side of each chicken cutlet with pepper. In a large skillet, heat oil and sauté garlic until fragrant. Add chicken, peppered side down, and cook for about 12 to 15 minutes, or until the chicken is fully cooked and juices run clear.
In a small bowl, mix together mayonnaise, mustard, and rosemary. Spread the mixture onto 4 slices of focaccia bread. Place a chicken cutlet on each slice, then top with another slice of bread.
