Grandma's Classic New Brunswick-Style Potato Stuffing

Instructions

Begin by placing the potatoes in a large pot and covering them with salted water. Bring to a boil over high heat, then reduce the heat and let it simmer for about 20 minutes until the potatoes are tender. Drain, let them steam dry for a couple of minutes, then mash them until smooth.

In a skillet, melt the butter over medium heat. Add the celery and onion, cooking until the onion becomes translucent, about 5-7 minutes. Once cooked, mix this with the mashed potatoes, then stir in the savory herb blend and allow the mixture to cool slightly.

Transfer the cooled mashed potato mixture into a large bowl. Stir in the beaten egg, then gently fold in the cubed bread. Season with salt and pepper to taste, and refrigerate until ready to use.
Chef's Tip
This stuffing can be used to fill a turkey or baked in buttered loaf pans at 350°F (175°C) for 30-40 minutes until golden and crisp.
