Greek-Inspired Pizza

½ (10 ounce) package frozen chopped spinach, thawed and squeezed dry

¼ cup chopped fresh basil

2 ¼ teaspoons lemon juice

1 ½ teaspoons dried oregano

ground black pepper to taste

1 (14 ounce) package refrigerated pizza crust

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1 large tomato, thinly sliced

⅓ cup seasoned bread crumbs

1 cup shredded mozzarella cheese

¾ cup crumbled feta cheese
Instructions

Preheat the oven to 400°F (200°C). If you're using a pizza stone, place it in the oven to heat up.

Heat 1 tablespoon of olive oil in a large skillet. Sauté onion and garlic until soft, about 5 minutes. Add spinach and cook, stirring until all moisture has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Let the mixture cool slightly.

Roll out the pizza dough onto the preheated pizza stone or a large baking sheet. Brush with the remaining tablespoon of olive oil. Spread the spinach mixture over the dough, leaving a small border around the edges. Top with 1 cup of mozzarella cheese.

Coat tomato slices in seasoned bread crumbs, pressing lightly. Arrange the tomatoes on top of the pizza. Sprinkle the remaining 1 cup of mozzarella cheese and feta cheese over the tomatoes.

Bake in the preheated oven until the crust is golden and the cheese has melted, about 15 minutes.
