Greek-Style Lemon Chicken and Roasted Potatoes

1 (12 ounce) package fresh green beans
Instructions
Preheat the oven to 425°F (220°C). Lightly grease a large baking sheet with sides.
Arrange the chicken quarters on the prepared baking sheet. In a large bowl, toss the potatoes with olive oil, the juice of one lemon, basil, oregano, salt, pepper, and lemon herb seasoning to coat the potatoes evenly. Surround the chicken with the potatoes on the sheet. Drizzle about three-quarters of the oil mixture over the chicken, saving the rest. Squeeze the remaining lemon juice over both the chicken and potatoes.
Bake in the preheated oven for approximately 30 minutes. Shake the baking sheet to loosen the potatoes, then bake for an additional 15 minutes. Add the green beans to the remaining oil mixture and toss to coat. Once the chicken mixture is done, pour the green bean mixture over the chicken and potatoes.
Return the pan to the oven and bake until the green beans are crisp-tender, the chicken is fully cooked (with no pink near the bone), and the juices run clear, about 15 minutes more. An instant-read thermometer inserted near the bone should read 165°F (74°C).
Cooking Tips
For a crispy, golden top on the chicken and potatoes, broil the dish for 5 minutes. You can substitute Greek seasoning for lemon herb seasoning. And be sure to serve with some delicious tzatziki sauce!
