6 slices bacon, chopped

1 onion, chopped

3 eggs

¾ cup buttermilk baking mix

1 ½ tablespoons chopped fresh parsley

2 cups shredded American cheese
Instructions

Preheat the oven to 350°F (175°C). Grease two mini muffin pans. In a large skillet, cook the bacon and onions over medium heat for about 5 minutes, or until the bacon is crispy. Drain excess fat and set aside.

In a medium-sized bowl, whisk the eggs. Mix in the baking mix, parsley, shredded cheese, bacon, and onions. Spoon the mixture into the greased muffin cups.

Bake in the preheated oven for 10 to 15 minutes, or until the tops are golden brown. Let the mini quiches cool in the pans before gently lifting them out with a small knife or spatula.
