Grilled Chicken Salad with Crispy Wontons

1 (4 ounce) can sliced water chestnuts, drained

½ cup toasted sliced almonds

1 (10 ounce) can mandarin orange segments, drained
Instructions

Place the chicken breasts in a bowl, pour teriyaki sauce over them, and ensure they're well-coated. Cover and refrigerate for 1 hour.

Preheat the grill to medium-high heat for direct grilling.

To make the dressing, combine green onions, salt, pepper, and sugar in a blender. Add olive oil and rice vinegar. Blend until smooth, then transfer to a bowl, cover, and chill until ready to use.

Grill the chicken, turning occasionally, until fully cooked. Remove from the grill, let rest for a few minutes, then slice into strips.

In a large skillet or wok, heat oil over medium-high heat. Cut the wonton wrappers into strips and fry until golden and crispy. Drain on paper towels.

In a large bowl, combine lettuce, water chestnuts, sesame seeds, sliced almonds, and mandarin oranges. Drizzle with the prepared dressing and toss gently. Top with crispy wontons and grilled chicken strips.
