Creamy Chicken Linguine

Ingredients List
-
2 tablespoons butter
-
1 tablespoon olive oil
-
1 clove garlic, minced
-
6 skinless, boneless chicken breast halves
-
1 (16 ounce) package linguine pasta
-
1 onion, chopped
-
½ cup water
-
1 cube chicken bouillon, crumbled
-
1 ¼ cups heavy cream
-
1 cup grated Parmesan cheese
-
¾ cup milk
-
4 green onions, sliced diagonally into 1/2 inch pieces
-
2 tablespoons chopped parsley, for garnish
Cooking Instructions
Melt butter and olive oil in a large skillet over medium heat. Add the chicken and cook until fully cooked through, with juices running clear. An instant-read thermometer should show at least 165°F (74°C) when inserted into the thickest part of the chicken. Once cooked, transfer the chicken to a plate to cool, then slice it diagonally into long strips. Keep the butter mixture in the pan for later use.
While the chicken cools, bring a large pot of salted water to a boil. Cook the linguine in the boiling water until it reaches an al dente texture, about 11 minutes. Drain the pasta and set it aside.
Reheat the butter mixture in the pan over medium heat. Add the onion and sauté, stirring frequently, until the onion becomes tender but retains its white color. Pour in the water and bouillon, bring the mixture to a boil, and let it simmer uncovered for approximately 10 minutes. Stir in the cream, Parmesan cheese, milk, and green onions, ensuring the sauce is well combined.
Place the linguine in a large serving bowl. Arrange the chicken slices artistically over the top. Pour the creamy sauce over the chicken and pasta. Garnish with freshly chopped parsley before serving.

Cooking Tip
For a different twist, try garnishing the dish with any fresh herbs of your choice instead of parsley.
