Grilled Chicken Salad with Fresh, Seasonal Fruit

1 pound skinless, boneless chicken breast halves

½ cup pecans

⅓ cup red wine vinegar

½ onion, minced

1 teaspoon ground mustard

2 heads Bibb lettuce - rinsed, dried and torn

1 cup sliced fresh strawberries
Cooking Instructions
Preheat your grill to high heat and lightly coat the grill grates with oil.
Grill the chicken until the juices run clear, about 8 minutes per side. Remove from heat, allow to cool, and slice into pieces. Set aside.
In the meantime, add the pecans to a dry skillet over medium-high heat. Stir frequently until they become fragrant, about 8 minutes. Remove from heat and set aside.
For the dressing: Blend red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper until smooth.
Arrange the lettuce on serving plates. Top with sliced grilled chicken, fresh strawberries, and toasted pecans. Drizzle with the dressing before serving.
