Grilled Flank Steak Caprese Salad

2 medium tomatoes, diced

1 (4 ounce) ball fresh mozzarella, cut into 1-inch cubes

¼ cup coarsely chopped fresh basil

2 cloves garlic, minced, divided

41 tablespoons olive oil, divided

1 pound flank steak

salt and ground black pepper to taste

1 (6.5 ounce) bag butter lettuce mix

2 tablespoons balsamic vinegar, or to taste
Instructions
In a bowl, combine the tomatoes, mozzarella, basil, 1 minced garlic clove, and 1 tablespoon olive oil; toss everything to coat. Cover and chill in the refrigerator until ready to serve.
Preheat your outdoor grill to medium-high heat and lightly oil the grill grate to prevent sticking.
Place the steak in a large resealable bag and add 1 minced garlic clove, 1 tablespoon of olive oil, salt, and pepper. Seal the bag and massage the oil mixture into the steak.
Once the grill is preheated, cook the steak to your preferred level of doneness, approximately 5 minutes per side for medium. Use an instant-read thermometer to ensure the internal temperature reaches 140°F (60°C). Let the steak rest for 5 minutes before slicing thinly against the grain.
Arrange the lettuce on 4 individual plates. Drizzle each serving with 1 1/2 teaspoons of balsamic vinegar and olive oil. Top with equal portions of steak and tomato mixture.
