Grilled Hawaiian Chicken and Pineapple Skewers
Ingredients List
-
3 tablespoons soy sauce
-
3 tablespoons brown sugar
-
2 tablespoons sherry
-
1 tablespoon sesame oil
-
¼ teaspoon ground ginger
-
¼ teaspoon garlic powder
-
8 skinless, boneless chicken breast halves - cut into 2-inch pieces
-
1 (20 ounce) can pineapple chunks, drained
-
8 bamboo skewers, soaked in water for 20 minutes
Instructions
Combine soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder in a shallow dish. Add chicken pieces and pineapple chunks, stirring to coat evenly. Cover and refrigerate for 1 to 2 hours to marinate.
Preheat the grill to medium-high heat and lightly grease the grate.
Thread the chicken and pineapple pieces alternately onto skewers. Discard any leftover marinade.
Grill on the preheated grill, turning occasionally, until the chicken is no longer pink in the center and the juices run clear, about 15 to 20 minutes. The internal temperature should reach at least 165°F (74°C) when measured with an instant-read thermometer.
