Grilled Mediterranean Herb Pork Chops

4 bone-in pork rib chops (not pork loin chops) - at least 1/2-inch thick

⅓ cup extra-virgin olive oil
Cooking Instructions

Combine sage, rosemary, salt, thyme, fennel, sugar, and bay leaves in a bowl until evenly mixed.

Rub the herb mixture over both sides of the pork chops and drizzle with olive oil. Cover and refrigerate for a few hours or overnight to marinate.

Preheat your grill to medium heat and lightly oil the grill grates.

Grill the pork chops until they are nicely browned, with visible grill marks, and the meat is cooked through, about 4 minutes per side. For safety, check with a meat thermometer—the internal temperature should reach at least 145°F (63°C) when inserted into the thickest part of the chop.
Chef's Tip
If you prefer broiling to grilling, simply preheat your broiler in Step 3 and adjust the oven rack to about 4 inches from the heat source. Arrange the pork chops on a broiler pan and broil them until they are golden brown with crispy edges, around 4 minutes per side. Use an instant-read thermometer to check that the internal temperature of the thickest part of the chop reaches at least 145°F (63°C).
