Grilled Pork Chops with a Glazed Finish

Ingredients List
-
2 tablespoons dark brown sugar, or to taste
-
1 cup ketchup
-
1 cup mayonnaise
-
½ cup prepared yellow mustard
-
¼ cup Worcestershire sauce (Optional)
-
1 teaspoon chili powder (Optional)
-
⅛ teaspoon ground cayenne pepper (Optional)
-
6 (3/4 inch thick) pork chops
Instructions for Cooking
-
Preheat the grill to a medium-high setting, then lightly grease the grill rack.
-
In a mixing bowl, combine brown sugar, ketchup, mayonnaise, mustard, Worcestershire sauce, chili powder, and cayenne pepper, stirring until smooth and well-blended.
-
Place the pork chops onto the hot grill, cooking them until the exterior is seared, and the center is slightly pink, about 5 minutes. Brush the pork chops with the glaze mixture, then flip the chops to cook the glaze onto the meat. Once the first side has developed grill marks, flip again, brush more glaze on, and cook until the second side has achieved brown grill marks. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C) in the center of the chop.
