Grilled Pork Chops with Nectarine Salsa

2 nectarines, pitted and diced

1 ripe tomato, seeded and diced

¼ cup diced onion

2 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice

¼ teaspoon crushed red pepper flakes, or to taste

1 teaspoon ground cumin

1 teaspoon chili powder

salt and ground black pepper to taste

2 tablespoons olive oil

8 (4 ounce) boneless pork loin chops
Instructions

Preheat the grill to medium-high heat. Lightly grease the grate, and set it 4 inches from the heat source.

For the salsa, combine the diced nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl. Toss gently to mix, and season with salt to taste. Cover and refrigerate for 30 minutes to allow the flavors to meld.

In a small bowl, combine cumin, chili powder, salt, and pepper. In another small bowl, pour the olive oil. Brush the pork chops with oil, then evenly coat both sides with the spice mixture.

Grill the pork chops on the preheated grill for about 4 minutes on each side, until lightly browned and the juices run clear. Serve the pork chops on plates, topped with a generous spoonful of the nectarine salsa.
