2 (14 ounce) packages extra-firm tofu, drained

Gather all your ingredients.

Place the tofu on a plate and cover it with another plate. Add a 3 to 5-pound weight on top to press the tofu for 20 to 30 minutes. Discard any liquid that accumulates.

In the meantime, combine vinegar, soy sauce, olive oil, garlic powder, salt, cayenne pepper, marjoram, and black pepper in a small bowl.

Slice the tofu into 6 thick pieces. Arrange them in a baking dish and pour the marinade over the tofu, making sure each piece is coated. Refrigerate, covered, and turn occasionally for at least 30 minutes, or up to 48 hours for more flavor.

Preheat your outdoor grill or charcoal grill to high heat. Lower the heat to medium and lightly oil the grill grates.

Remove tofu from the marinade, allowing any excess to drip off. Set the remaining marinade aside to make the sauce.

Grill the tofu on the preheated grill, turning it once, until it's golden brown and grill marks appear, but before they blacken, which should take 10 to 15 minutes. Transfer the tofu to a platter and cover with foil to keep warm.

Bring the reserved marinade to a boil in a saucepan, then reduce the heat and simmer for about 2 minutes, until it reduces to around 1 cup. Pour the sauce over the grilled tofu and serve either hot, warm, or at room temperature.
Cook's Tips
This recipe is easily scalable; just double the ingredients, but you won't need to double the marinade—about 1 ½ times the usual amount works perfectly for four packages of tofu.
To prevent sticking on the grill, allow the tofu to cook for 5 minutes before flipping it. Use a flat spatula, like a pancake turner, to carefully release the tofu from the grill grates before turning it.
