Ham and Spinach Quiche

1 (10 ounce) package frozen chopped spinach, thawed and drained

1 ½ cups milk

1 cup diced cooked ham

3 eggs, beaten

¾ cup baking mix (such as Bisquick ®)

½ cup chopped onion

½ cup shredded sharp Cheddar cheese

½ cup shredded Monterey Jack cheese
Instructions

Preheat the oven to 400°F (200°C) and grease a 10-inch pie plate.

Spread the spinach evenly over the bottom of the prepared pie plate, pressing it down gently to form a compact layer.

In a mixing bowl, beat together milk, ham, eggs, baking mix, onion, Cheddar cheese, and Monterey Jack cheese. Pour the mixture over the spinach layer in the pie plate.

Bake in the preheated oven for 35-40 minutes, or until the center of the quiche is set.
