Healthier Stuffed Bell Peppers

1 cup water

½ cup brown rice

1 pound lean ground beef

1 onion, chopped

2 cloves garlic, minced

2 green bell peppers

2 red bell peppers

2 yellow bell peppers

2 (8 ounce) cans natural tomato sauce

1 tablespoon Worcestershire sauce

salt and ground black pepper to taste

1 teaspoon Italian seasoning

¼ cup grated Parmesan cheese, optional
Cooking Instructions

Preheat your oven to 350°F (175°C).

In a saucepan, bring water and brown rice to a boil. Lower the heat to medium-low, cover, and let it simmer until the rice is fully cooked and all the liquid is absorbed, about 45-50 minutes.

While the rice is cooking, heat a large skillet over medium heat. Add the ground beef, chopped onion, and minced garlic to the skillet. Cook, stirring occasionally, until the meat is browned and the onions are tender, approximately 5 minutes. Set aside.

Slice off the tops, remove seeds, and scrape out the membranes from the green, red, and yellow bell peppers. Place the peppers in a baking dish with the hollowed-out sides facing up. If necessary, trim the bottoms slightly so they stand upright.

In a bowl, combine the browned beef mixture, cooked rice, a can of tomato sauce, Worcestershire sauce, salt, and pepper. Spoon this mixture into each bell pepper. In another bowl, mix the remaining tomato sauce with Italian seasoning, and pour it over the stuffed peppers.

Bake in the preheated oven, basting with the sauce every 15 minutes, until the peppers are tender, about 1 hour. Sprinkle with grated Parmesan cheese and serve hot.
