Hearty Vegetarian Bean Curry

1 large white onion, chopped

½ cup dry lentils

2 cloves garlic, minced

3 tablespoons curry powder

1 teaspoon ground cumin

1 pinch cayenne pepper

1 (28 ounce) can crushed tomatoes

1 (15 ounce) can garbanzo beans, drained and rinsed

1 (8 ounce) can kidney beans, drained and rinsed

½ cup raisins

salt and pepper to taste
Instructions

Heat the oil in a large pot over medium heat, then sauté the onion until soft. Add the lentils and garlic, followed by the curry powder, cumin, and cayenne pepper. Stir and cook for 2 minutes. Next, add the tomatoes, garbanzo beans, kidney beans, and raisins. Season with salt and pepper to taste. Lower the heat, cover, and simmer for at least 1 hour, stirring occasionally.
