Honey-Glazed Spicy Roasted Chicken

1 (6 pound) whole roasting chicken

½ cup honey

1 tablespoon chili powder

1 ½ teaspoons ground cumin

½ teaspoon cayenne pepper

1 teaspoon salt

1 teaspoon garlic powder

2 tablespoons butter, melted
Instructions

Preheat your oven to 400°F (200°C). Rinse the chicken and pat it dry, then place it in a roasting pan.

In a bowl, combine honey, chili powder, cumin, cayenne pepper, salt, and garlic powder. Rub the mixture all over the chicken with your hands, then baste with melted butter.

Roast the chicken in the preheated oven until the skin is golden and crispy, about 30 to 45 minutes. Baste the chicken occasionally with the juices in the pan.

Lower the temperature to 350°F (175°C) and continue roasting until the chicken is fully cooked, with juices running clear and the meat no longer pink near the bone, about 1.5 to 2 hours. Baste during cooking. The internal temperature of the thickest part of the thigh should reach 180°F (80°C). Remove from the oven, cover with foil, and let the chicken rest for 10 minutes before carving.
