Instant Pot Filipino Chicken Adobo Recipe

Ingredients Needed

½ cup distilled white vinegar

¼ cup soy sauce

2 tablespoons minced garlic

1 tablespoon brown sugar

1 teaspoon black peppercorns, roughly cracked

2 bay leaves

1 large onion, sliced

1 ½ pounds bone-in, skin-on chicken thighs

1 tablespoon chopped scallions
Instructions

In a medium bowl, whisk together vinegar, soy sauce, garlic, olive oil, brown sugar, and crushed peppercorns until the sugar dissolves. Add bay leaves and stir to combine.

Place onion slices at the bottom of a multi-functional pressure cooker (like an Instant Pot). Lay the chicken thighs on top of the onions and pour the vinegar mixture over the chicken. Lock the lid in place.

Set the Instant Pot to high pressure according to the manufacturer's instructions and set the timer for 10 minutes. Allow the pressure to build, which will take about 10 minutes.

Line a baking sheet with aluminum foil in preparation for broiling.

Use the quick-release method to release pressure, following the manufacturer's guidelines (about 5 minutes). Unlock the lid, then carefully transfer the chicken thighs to the prepared baking sheet, placing them skin-side up. Use the Sauté function to simmer the sauce until it thickens, about 3 to 5 minutes.

Move an oven rack about 6 inches below the heat source and preheat the oven's broiler to high heat.

Broil the chicken under the preheated broiler until the skin crisps up, about 6 to 8 minutes. Serve the chicken on a platter, spoon the sauce over the top, and garnish with chopped scallions.
