Instructions
Set your multi-cooker (like an Instant Pot) to the Saute setting. Melt butter in the pot, then sauté the onion, apple, and celery until the onion and celery begin to soften, about 5 minutes. Pour in the broth, scraping up any browned bits from the bottom of the pot. Stir in the gravy mix until it dissolves completely.
In a small bowl, combine kosher salt, thyme, rosemary, black pepper, sage, and garlic powder. Rub the seasoning mixture generously over the turkey breast.
Place a trivet in the pot and set the seasoned turkey breast on top. Secure the lid and lock it. Set the multi-cooker to high pressure according to the manufacturer's instructions, then set the timer for 50 minutes. Allow the pressure to build for about 10 to 15 minutes.
Release the pressure using the natural-release method as per the manufacturer's instructions. This can take anywhere from 10 to 40 minutes.
Slowly mix water and quick-mixing flour together in a bowl, stirring until the mixture becomes a smooth slurry.
Carefully release the lid and remove the turkey from the pot, transferring it to a plate. Strain the cooking liquid, return it to the pot, and select the Saute function. Bring the liquid to a boil, then gradually whisk in the slurry until the gravy reaches your desired thickness. Slice the turkey and serve with the rich gravy.
