Italian Pork Chops

Step-by-Step Instructions
Heat 1 teaspoon of oil in a skillet over medium heat. Add the mushrooms and cook, stirring occasionally, until softened, about 5 to 7 minutes. Remove from heat and set aside for later use.
Heat 2 tablespoons of oil in a skillet over medium heat. Add the pork chops and cook until both sides are browned, about 3 1/2 to 5 minutes per side. Transfer to a plate and remove all but 1 tablespoon of the drippings from the skillet.
Add the onion and garlic to the skillet; cook and stir until the onion becomes soft and translucent, about 5 minutes. Stir in the tomatoes, basil, oregano, salt, and pepper. Return the pork chops to the skillet and simmer until they are fully cooked and no longer pink in the center, approximately 45 minutes. Add water if the mixture gets too dry. An instant-read thermometer should read at least 145°F (63°C) when inserted into the center of the pork chops.
Top each pork chop with a slice of bell pepper. Add the reserved mushrooms and continue to simmer until the peppers are soft, about 5 to 10 minutes.

Pro Tip
Wait until the pork chops are fully cooked before adding the bell peppers to prevent them from becoming mushy.
