Jalapeño Popper Grilled Cheese Sandwich

10 pickled jalapeno pepper slices, or to taste - chopped

2 ciabatta sandwich rolls

4 teaspoons butter

8 tortilla chips, crushed

½ cup shredded Colby-Monterey Jack cheese
Cooking Instructions
Mix cream cheese, sour cream, and chopped pickled jalapenos in a small bowl. Set the mixture aside. Heat a skillet over medium heat.
Cut each roll in half horizontally, then trim the tops of the ciabatta to create a flat surface. Spread 1 teaspoon of butter on the cut side of the bottom bun and another teaspoon on the now-flat top bun. On the bottom bun, layer half of the cream cheese mixture, half of the crushed chips, and half of the shredded cheese on the non-buttered side. Top with the bun's flat half and place the sandwich onto the hot skillet. Repeat the process for the second sandwich.
Grill the sandwich for 3 to 5 minutes until lightly golden, then flip and cook until the cheese melts and the second side turns crispy and golden.
