Lolah's Classic Chicken Adobo

3 pounds boneless, skinless chicken thighs, rinsed and patted dry

6 cloves garlic, peeled and thinly sliced

½ cup soy sauce

½ cup apple cider vinegar

½ cup water

2 tablespoons pickling spice, wrapped in cheesecloth
Instructions

Heat oil in a large pot over medium heat until it shimmers. Sauté garlic in the hot oil for no more than 30 seconds. Add all of the chicken to the pot, stirring frequently, and cook until the chicken turns white, avoiding browning.

Pour in the soy sauce, vinegar, and water, then add the pickling spice. Ensure the spice ball is fully submerged. Bring the mixture to a boil, lower the heat to a simmer, and cover the pot, allowing some steam to escape. Let it simmer for 1 hour, or until the chicken becomes tender and fully cooked.
