Maple and Mustard Glazed Roast Pork

2 ½ pounds boneless pork loin roast

1 cup real maple syrup

¼ cup prepared Dijon-style mustard

2 ½ tablespoons cider vinegar

2 ½ tablespoons soy sauce

salt and ground black pepper to taste
Cooking Instructions

Preheat the oven to 350°F (175°C). Place the pork roast in a shallow roasting pan.

In a small bowl, whisk together the maple syrup, mustard, vinegar, soy sauce, salt, and pepper. Pour the glaze evenly over the pork roast.

Roast, uncovered, in the preheated oven for about 1 hour, or until the pork is slightly pink in the center. The internal temperature should reach at least 145°F (63°C). Remove from the oven and let it rest for 10 minutes before slicing.
