Maple-Brined Pork Loin Roast

Pork Loin Ingredients:

1 (2 1/2 pound) boneless pork loin roast

2 tablespoons maple syrup

2 tablespoons Dijon mustard
Instructions
Prepare the brine: In a large stainless steel bowl, combine water, maple syrup, salt, garlic, ginger, black pepper, rosemary, and red pepper flakes.
Prepare the pork: Submerge the pork loin into the brine, cover it, and refrigerate for a minimum of 8 hours, or up to 10 hours if preferred.
Remove the pork from the brine and discard the liquid. Pat the pork dry, then season generously with salt and black pepper on all sides.
Preheat your oven to 325°F (165°C).
Heat vegetable oil in a heatproof skillet over high heat. Add the pork and sear, turning occasionally, until browned on all sides, about 10 minutes in total.
Transfer the skillet to the preheated oven and roast the pork until it develops a golden-brown crust, approximately 40 minutes.
In a small bowl, combine maple syrup and Dijon mustard. Brush the mixture generously over the top and sides of the roast. Continue roasting until the pork reaches a slight pinkness in the center, about 15 more minutes. An instant-read thermometer should register at least 145°F (63°C) when inserted into the center of the roast.
Cooking Tip
Avoid brining the pork loin for more than 10 hours to prevent over-flavoring.
