Mexican-Style Grilled Steak

Ingredients Needed

½ cup cumin seeds

5 jalapeno peppers, seeds and ribs removed, chopped

3 cloves garlic

1 tablespoon cracked black pepper

⅓ cup fresh lime juice

1 ½ teaspoons salt

1 ½ cups olive oil
-
2 bunches cilantro (leaves and stems)

1 (3 pound) skirt or flank steak
Instructions

In a medium skillet, toast the cumin seeds over medium-low heat for about 5 minutes, or until they become aromatic.

In a blender, combine the toasted cumin seeds, jalapenos, garlic, pepper, lime juice, and salt. Pulse until the mixture is finely chopped. Add the oil and cilantro, and blend until smooth.

Score both sides of the steak lightly with a knife to help the marinade absorb. Place the steak in a large ziplock bag or bowl, pour the marinade over the top, and make sure the steak is fully coated. Refrigerate and marinate for 24 to 48 hours.

Preheat your grill to high heat and lightly oil the grate.

Remove the steak from the marinade and discard any leftover marinade. Grill the steak for 1 to 2 minutes per side to get a nice sear. Lower the heat and cook for an additional 3 to 4 minutes per side, or until the steak reaches your preferred level of doneness.
